Crafts are a great way to encourage children's receptive and expressive language. They have to listen to and follow directions while you make the craft. You can work on vocabulary while you talk about the craft, and you can work on explaining a task by having the children retell what they did, or explain to a friend how to make the craft.
Here's a great link to printables and Christmas activiites for kids: DLTK's Crafts for Kids Christmas Activities for Children.
